Tiramisu Cookies

These Tiramisu Cookies are the perfect balance of rich espresso-flavored cookies and creamy mascarpone cream. The cookies are soft with a deep coffee flavor, while the mascarpone cream adds a smooth, sweet contrast. A delightful treat for tiramisu and coffee lovers!

Ingredients
  • Cookies:
  • -110 g butter
  • -100 g granulated sugar
  • -100 g dark brown sugar
  • -1 egg
  • -1 tsp vanilla extract
  • -230 g all-purpose flour
  • -½ tsp baking powder
  • -½ tsp baking soda
  • -1 tbsp instant espresso powder
  • -½ tsp salt
  • Mascarpone Cream:
  • -180 g mascarpone cheese
  • -90 g confectioners' sugar
  • -120 g heavy cream
  • -1 tbsp cocoa powder (for dusting)
Directions
Step 1
Cookies: In a bowl, mix melted butter with granulated and brown sugar for 1 minute. Add egg and vanilla
Step 2
mix until combined. In a separate bowl, whisk flour, baking powder, baking soda, espresso powder, and salt. Gradually mix into wet ingredients until just combined. Scoop out 11 balls (2 tbsp each) and refrigerate for 1 hour.
Step 3
Preheat oven to 180ºC (355ºF). Bake cookies on a lined tray for 10-11 minutes. Cool on the tray for 3 minutes, then transfer to a rack to cool completely.
Step 4
Mascarpone Cream: In a medium bowl, whip mascarpone, confectioners’ sugar, and heavy cream until stiff peaks form. Chill until ready to use. Using a large round tip, pipe mascarpone dots onto cooled cookies . Dust with cocoa powder before serving. Enjoy your delicious cookies!
