Raspberry Banana Bread

Ingredients

- 240 g all-purpose flour
- 2 tsp baking powder (8 g)
- ½ tsp baking soda (2 g)
- Optional: 1 tsp cinnamon (3 g)
- 2 eggs (about 100 g total)
- 150 g semi-melted butter
- 120 g white sugar
- 80 g brown sugar
- 2–3 mashed ripe bananas (around 180 g)
- 2 tbsp cream cheese (30 g)
- 100 g fresh raspberries
- 80–100 g chocolate chips
Directions
- Step 1
- Preheat your oven to 175°C (350°F). Line a loaf pan with parchment paper.
- Step 2
- In a bowl, whisk together the flour, baking powder, baking soda, and optional spices (if using). Set aside.
- Step 3
- In another bowl, beat the eggs, butter, white sugar, brown sugar, mashed bananas, and cream cheese until well combined.

- Gradually fold the dry ingredients into the wet mixture until just combined.

- If you don’t want to colour half the batter just add all the batter in the tin and sprinkle white chocolate chips and raspberries on top. Optionally, divide the batter evenly and colour one half pink. If you choose to do this add half of the white batter then sprinkle with cacao powder, add half of the pink batter and sprinkle with cacao then add the last of the white batter and sprinkle with cacao and lastly add the last of the pink batter without sprinkling with cacao instead top with white chocolate chips and raspberries.

- Bake for 50–60 minutes or until a toothpick inserted into the centre comes out with just a few moist crumbs. Check halfway through and if the top Strats browning too much cover with foil.

- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
