Ingredients
- -2 large eggs
- -½ cup (43g) Dutch-process cocoa
- -½ tsp salt
- -½ tsp baking powder
- -½ tsp espresso powder (optional)
- -½ tsp vanilla extract
- -8 tbsp (113g) unsalted butter
- -1 cup (224g) granulated sugar
- -¾ cup (90g) all-purpose flour
- -1 cup (200g) chocolate chips I used 100g dark and 100g white chocolate
- -50 g white chocolate (for making the chocolate hearts)
- -extra chocolate for decoration to place on top of the brownie once it’s done baking
- -pink food colouring (optional)
Directions
- Step 1
- Preheat oven to 175°C (350°F). Line a 8×8 (20×20 cm) pan with parchment.
- Step 2
- Melt butter, then mix with sugar. Add half of the chocolate chips (100g) now and the cocoa powder, mix and heat in microwave for 30-40sec, this is done so the chocolate chips melt. Stir until smooth.
- Step 3
- Whisk in the eggs until completely combined, then add flour, salt, baking powder and mix until combined. Fold in remaining chocolate chips.
- Step 4
- Spread batter in pan and bake for 25-30mins, until edges are set and the centre has moist crumbs but no raw batter.
- Step 5
- To make the chocolate hearts, melt white chocolate in the microwave in 20 seconds increments. Separate the chocolate in 2 bowls. In the first bowl only put 1 drop pink food colouring to get a lighy pink colour and in the third bowl put a few more drops of the colouring in order to get a darker shade. Pipe hearts on a parchment paper and put in the fridge for about 15-20mins to harden up. If you don’t have food colouring you can just pipe the hearts using the white chocolate or even milk, dark chocolate.
- Step 6
- When the brownie is done leave to cool on the pan for 10 mins then while it’s still warm push the chocolate chunks on top of the brownie, leave for another 5mins and take the hearts out of the freezer and place on top of the brownie too. The chocolate chunks and hearts will melt onto the brownie but as you leave them to cool, they harden up or you can pop in the fridge for 5-10mins to speed up the process.
