Mini Eggs Easter Cookies
These festive Easter cookies are soft, chewy, and packed with chocolate chips—topped with a swirl of pastel frosting, a dark chocolate “nest,” and mini eggs for a cute springtime finish. With their speckled frosting and crunchy chocolate topping, they’re the perfect treat to celebrate the season and impress your guests or kids.

Ingredients
- Cookies:
- -115g unsalted butter, softened
- -70g granulated sugar
- -50g light brown sugar
- -1 large egg
- -1 tsp vinegar (or lemon juice for a subtle tang)
- -1 tsp vanilla extract
- -165g all-purpose flour
- -½ tsp baking soda
- -¼ tsp baking powder
- -¼ tsp salt
- -100g chocolate chips (dark, milk, or a mix)
- Cookie frosting:
- -butter: 85g
- -powdered sugar: 270g
- -double cream: 7-15g (to thin as needed)
- -turquoise gel food colouring (or any colour you like)
- Decoration:
- -bag of mini eggs
- -60g dark chocolate for the nest
- -black food dye or cacao powder
Directions
- Step 1
- Prepare the Dough:

- -Beat butter, granulated sugar, and brown sugar for 2-3 minutes until light and fluffy.
- Step 3
- -Add egg, vinegar, and vanilla extract. Mix until combined.
- Step 4
- -Sift in flour, baking soda, baking powder, and salt. Gently fold until just combined.
- Step 5
- -Stir in the chocolate chips.

- -Chill dough in the freezer for 5-10 minutes to firm up then scoop dough into 8 balls about 60g each and let that chill in the freezer for about 20-30mins.

- -Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
- Step 9
- -Bake for 10-11 minutes until the edges are set but the center is still soft.

- -Cool completely before decorating.

- Chocolate Nest: to make the nest you need to melt some dark chocolate and then put in a piping bag and pipe lines on a parchment paper and put in th freezer to firm up.

- Frosting: Whip the butter until smooth then add powdered sugar and a bit of heavy cream/milk to get the desired constancy(make sure it’s spreadable but still thick). Mix in vanilla extract and a drop of food colouring to achieve the blue shade or whatever colour you want.

- Assembly the cookies: Spread the frosting evenly on the cookies. In order to get the speckled look add 1-2 drops of black food colouring into 1/2tbs vodka and mix or another way to do it is to mix som water with cacao powder. Use a paintbrush and use your finger to flick and splatter the black coloured liquid onto the top of the frosting. You can practice on a paper towel before going for the cookies. Break apart the chocolate lines you piped and top with the chocolate to create the look of a nest and add the mini eggs inside the eggs. Enjoy!
