Carrot Cake Cookies with Cream Cheese Frosting

These Carrot Cake Cookies are soft, spiced, and packed with shredded carrots, crunchy walnuts, and a touch of cinnamon — all the best parts of carrot cake in handheld form. Topped with a luscious cream cheese frosting and a sprinkle of chopped nuts, they’re perfect for spring gatherings, Easter, or just because you’re craving something cozy and sweet.

Ingredients
  • Cookie Dough:
  • -½ cup butter softened = 115g
  • -⅓ cup brown sugar packed = 67g
  • -⅓ cup granulated sugar = 67g
  • -½ cup carrots shredded = 60g
  • -½ cup (56g) chopped pecans or walnuts
  • -1 tablespoon vanilla extract = 15g
  • -1 egg
  • -1 tablespoon heavy cream
  • -1 & ¾ cup all-purpose flour = 240g
  • -½ teaspoon baking powder = 2g
  • -½ teaspoon baking soda = 2g
  • -1 teaspoon cinnamon
  • -1/2 teaspoon salt = 1.5g
  • Frosting
  • -2 tablespoons (28.5g) unsalted butter, softened
  • -2 ounces (56g) cream cheese, room temperature
  • -110g powdered sugar
  • -⅛ teaspoon salt
  • Topping:
  • -chopped walnuts/pecans
  • -carrot decoration
Directions
Step 1
-Preheat oven to 350°F(175°C) Line two cookie sheets with parchment paper or silicone baking mats.
Step 2
-In a small bowl, whisk flour with baking soda, cinnamon and salt. Set aside.
Step 3
-Cream butter and brown sugar in a large bowl with an electric mixer 1-2 minutes. Mix in egg and vanilla until smooth.
Step 4
-Add dry ingredients to wet and mix until smooth. Stir in carrots and nuts.
Step 5
-Scoop 2 tablespoon size balls onto cookie sheets 2-inches apart. Lightly flatten with the palms of your hand. Place in the freezer for about 15-20mins.
Step 6
-Bake for 13-16 minutes or until no longer glossy. Cool before frosting.
Step 7
-To make frosting: beat butter and cream cheese with an electric mixer until smooth. Slowly mix in powdered sugar then add vanilla and salt. Beat on medium high speed until smooth.
Step 8
-Once the cookies are fully cool, pipe a swirl of the frosting on top of each cookie and use spatula or spoon to smooth out the frosting. Sprinkle the edges of the frosting with some chopped walnuts or pecans and I added the carrot decoration I bought from a shop in the middle.
