Easter Brookies

These decadent Easter brookies combine the best of both worlds: fudgy brownies and chewy chocolate chip cookies layered together in one festive treat. Packed with chocolate chips and topped with mini eggs and Maltesers bunnies, they’re rich, gooey, and perfect for Easter celebrations or springtime indulgence.

Ingredients
  • Cookie Dough
  • -100g unsalted butter, melted
  • -⅓ cup (70g) dark brown sugar, packed
  • -¼ cup (50g) granulated sugar
  • -1 large egg, at room temperature
  • -1 teaspoon pure vanilla extract
  • -165g all-purpose flour, spoon and leveled
  • -½ teaspoon baking soda
  • -¼ teaspoon salt
  • -¾ cup (100g) semi-sweet chocolate chips, plus more for sprinkling on top
  • Brownie:
  • -80g flour
  • -1/2 teaspoon salt
  • -35g cacao powder
  • -136g butter
  • -28g oil
  • -240g sugar
  • -2 eggs
  • -100 chocolate chips
  • Topping:
  • -mini eggs
  • -chocolate chips
  • -mini maltesrs easter bunnies
Directions
Step 1
Preheat your oven to 350°F (175°C). Line an 8×8 inch (20x20cm) baking pan with parchment paper and set aside.
Step 2
Cookie Dough: Prepare the cookie layer: Mix flour, baking soda, and salt. Set aside. Combine melted butter, brown and granulated sugar, egg, and vanilla. Whisk until smooth and fluffy for about 2-3 min. Add dry ingredients and chocolate chips. Mix until just combined. Chill the dough in the fridge/freezer while you make the brownie mix.
Step 3
Brownie: In a medium bowl, combine the dry ingredients, the flour, salt, and cocoa powder and set aside.
Step 4
In a pan over medium heat, combine the butter, vegetable oil, and half of the sugar.  Stir frequently until the butter is fully melted. Once melted, remove from heat and set aside.
Step 5
In a large mixing bowl, whisk together the egg and egg yolk, and the remaining sugar.
Step 6
Pour the warm butter mixture into the egg mixture. Add the butter mixture slowly, while continuously whisking to avoid cooking the eggs and keep on whisking until the ingredients are fully incorporated.
Step 7
Add the dry ingredients into the wet mixture. Stir until just combined. Don’t over mix.
Step 8
Gently fold in the chocolate chips. Be careful not to overmix the batter.
Step 9
Pour half of the brownie mixture in the baking pan , form large or small discs using half of the cookie dough and place on top of the brownie batter. Pour the remaining brownie batter on top of the cookie layer and top with the rest of the cookie dough.
Step 10
Bake for covered for about 25 then uncover and bake for another 20mins or until a toothpick inserted in the middle comes out mostly clean.
Step 11
As soon as the brownie comes out of the oven sprinkle some chocolate chips on top and let it cool down for about 15-20mins then top with the bunny maltesers and mini eggs then let it cool some more.
