Red Velvet Cheesecake Cookies

Red Velvet Sandwich Cookies with Cream Cheese Frosting are a stunning and indulgent treat, featuring soft, cake-like red velvet cookies filled with a rich, tangy cream cheese frosting. The vibrant red color and melt-in-your-mouth texture make these cookies perfect for special occasions, holiday celebrations, or just to satisfy your sweet tooth. With a sprinkle of cookie crumbs on top, they’re as visually appealing as they are delicious!

Ingredients
  • Cookies:
  • -115 g unsalted butter, softened
  • -70 g granulated sugar
  • -50 g light brown sugar
  • -1 large egg
  • -1 tsp vinegar
  • -red gel food colouring ( I also added 2 drops of black to darken the colour )
  • -165 g all-purpose flour
  • -1-2 tbsp natural cocoa powder
  • -½ tsp baking soda
  • -¼ tsp baking powder
  • -¼ tsp salt
  • Cream Cheese Frosting:
  • -85 g unsalted butter, softened
  • -170 g cream cheese
  • -125 g powdered sugar
  • -3-4 tbsp whipping cream
Directions
Step 1
Prepare the Dough: Beat butter, granulated sugar, and brown sugar for 2-3 minutes until light and fluffy. Add egg, vinegar, red food coloring, and vanilla. Mix until combined. Sift in flour, cocoa powder, baking soda, baking powder, and salt. Gently fold until just combined. Chill dough in the fridge for 15-20 minutes to firm up.
Step 2
Shape & Bake: Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper. Divide dough into 5-6 balls, leaving a small piece of dough aside for the crumbs. Slightly flatten each ball and place them apart on the tray. Bake for 10-11 minutes. Cool completely.
Step 3
Make the Frosting: Beat cream cheese and butter until smooth. Add icing sugar and vanilla
Step 4
mix until creamy. Gradually add whipping cream to achieve desired consistency. Transfer to a piping bag with a round tip or if you don’t have a piping tip just snip the end of the piping bag.
Step 5
Assemble: Pipe swirls of frosting onto cooled cookies. Crush the reserved cookie piece into crumbs and sprinkle on top.
