Salted Caramel Cookies

Ingredients
- Cookie Dough:
- -141 g butter, room temperature
- -156 g ( ¾ cup + 1 tbsp) granulated sugar
- -1 egg
- -1¼ tsp vanilla extract
- -¼ tsp salt
- -1¼ tsp baking powder
- -200 g ( 1½ cups) all-purpose flour
- For the Salted Caramel
- -1 cup (200 g) granulated white sugar
- -5 tbsp (70 g) salted butter, softened
- -1/2 cup (120 ml) heavy cream, at room temperature
- -1 tsp vanilla extract
- -1/4-1/2 tsp sea salt (depending on preference)
- Caramel Frosting:
- -113 g unsalted butter (room temp)
- -60–80 g caramel sauce (room temp)
- -125–150 g powdered sugar
- -½ tsp (2.5 ml) vanilla extract (optional)
- -Pinch of salt (if sauce isn’t salted)
Directions
- Step 1
- Make the Dough: Preheat oven to 175°C (350°F) and line a baking tray with parchment.
- Step 2
- Beat 141 g butter and 156 g sugar until light and fluffy (2–3 min). Mix in 1 small egg + ¼ small egg and 1¼ tsp vanilla. Stir in 1¼ tsp baking powder, ⅓ tsp salt, and 200 g flour until just combined.
- Step 3
- Bake & Fill: Scoop about 60 g dough per cookie onto tray, spacing them out. Gently flatten tops. Bake for 10–12 min, until edges are golden. Right out of the oven, press a cookie scoop or spoon into each center and let them cool completely.
- Step 4
- Salted Caramel: Add granulated sugar to a large saucepan over medium-low heat. Stir occasionally as it melts, first crystallizing, then turning golden (about 20 min). When mostly melted with a few lumps, reduce heat to low to prevent burning. When all the sugar has melted and turned golden in colour, add in the butter right away. Stir quickly until the butter is incorporated and add the heavy cream and stir again. Let it cool completely.

- Caramel Frosting: Beat the butter until pale and fluffy (2–3 min). Add the caramel sauce and vanilla
- Step 6
- beat until combined. Gradually mix in powdered sugar until smooth Adjust consistency with more sugar (to stiffen) or a tiny splash of milk/cream (to soften), if needed.
- Step 7
- Assembling the Cookies: Once the cookies are cooled, fill each with the caramel sauce and pipe the caramel frosting on top of them. optionally you can sprinkle some more caramel and/or sea salt and cookie crumbs.
