Soft Gingerbread Cookies
Gingerbread Men Cookies are a classic holiday treat with a delightful blend of warm spices like cinnamon, ginger, and cloves. Ingredients
- -115g unsalted butter, at room temperature
- -135g dark brown sugar
- -80g molasses or golden syrup (I used Golden Syrup as I like them to be milder. The ratio is 1:1)
- -1 large egg yolk
- -1 tsp vanilla extract
- -280g all-purpose flour
- -2 tsp ground cinnamon
- -2 tsp ground ginger
- -1 tsp baking soda
- -½ tsp fine sea salt
- -¼ tsp ground cloves
- -15ml milk ( any milk)
Directions
- Step 1
- Cream Butter & Sugar: In a stand mixer or with an electric mixer, beat the butter and brown sugar until fluffy. Add molasses, egg yolk, and vanilla
- Step 2
- mix until combined.
- Step 3
- Mix Dry Ingredients: In a separate bowl, whisk together flour, cinnamon, ginger, baking soda, salt, and cloves.
- Step 4
- Combine: Gradually add the dry ingredients to the wet mixture, mixing after each addition. Add the milk and mix until dough forms.
- Step 5
- Chill Dough: Divide the dough into two halves, flatten into 1-inch disks, wrap, and chill for at least 2 hours.
- Step 6
- Preheat & Roll Out: Preheat oven to 175°C (350°F). Line two baking sheets with parchment. Roll dough on a floured surface or a baking sheet to 6mm thickness. Cut shapes with cookie cutters.
- Step 7
- Bake: Place cookies on sheets and bake for 7–9 minutes until edges are set, but centers are soft. (Baking time depends on your oven and cookie size.) Let cool on the sheet for 5 minutes, then transfer to a wire rack.
- Step 8
- Decorate: Once completely cool, decorate as desired.
