Valentine’s Day Cookies

These soft and chewy cookies are the perfect sweet treat to celebrate Valentine's Day! With a buttery flavour, a touch of almond extract, and the festive pink hue, they are topped with beautiful white chocolate hearts that make them both delicious and charming. A delightful way to show someone you care!

Ingredients
  • -Butter (½ cup): 1 stick 113 grams
  • -Granulated sugar (½ cup): 100 grams
  • -Brown sugar (¼ cup) 50 grams
  • -Egg (1 large): about 50 grams
  • -Vanilla extract (1 teaspoon) about 4 grams
  • -Almond extract (¼ teaspoon, optional) about 1 gram
  • -Pink gel food coloring (¼ teaspoon, optional)
  • -All-purpose flour (1 & ¾ cups) 220 grams
  • -Cornstarch (1 tablespoon) 8 grams
  • -Baking soda (½ teaspoon) 2 grams
  • -Salt (¼ teaspoon)
  • -White chocolate about 150g for piping the hearts
Directions
Step 1
Preheat the oven to 350°F / 175°F line a baking sheet with parchment paper.
Step 2
Cream the butter, granulated sugar, and brown sugar until light and creamy. Add the egg, vanilla, almond extract (optional), and pink gel food coloring (optional)
Step 3
mix until fully combined.
Step 4
Stir in the flour, cornstarch, baking soda, and salt until just incorporated.
Step 5
Scoop out 8 equally-sized dough balls (about 60 grams each) and place them on a baking sheet. Freeze for 15 minutes.
Step 6
Bake for 12-13 minutes.
Step 7
To make the chocolate hearts, melt white chocolate in the microwave in 20 seconds increments. Separate the chocolate in 3 bowls, leaving one white. In the second bowl only put 1 drop pink food colouring to get a lighter colour and in the third bowl put a few more drops of the colouring in order to get a darker shade. Pipe hearts on a parchment paper and put in the fridge for about 15-20mins to harden up.
Step 8
Top the cookies with the piped hearts while they are slightly warm. The hearts will melt into the cookies but as you leave them to cool, the hearts on top of the cookies will harden up or you can pop in the fridge for 5-10mins to speed up the process. Enjoy!
